VEGAN MINI PIZZAS

INGREDIENTS
PIZZA DOUGH (create a day forward)
- 500 g / 4 mugs high-gluten all-purpose or breads flour, plus additional for dusting
- 10 g / 1½ tsp salt
- 1 tsp instant dried out yeast
- 4 tbsp / ¼ mug olive oil
- 300 ml / 1¼ mugs ice-cold water
- semolina flour, to avoid dough sticking
TOPPINGS
- preferred tomato sauce, shop-bought or homemade
- preferred vegan pesto, shop-bought or homemade (I produced mine with rocket and pistachios)
- 1 tbsp pine nut products, raw
- 2 small courgettes, sliced up thinly on the mandolin
- 15 dark olives, sliced
- 10 cherry tomato vegetables, halved
- 30 g / 1 oz new child rocket / arugula
- a chunk of vegan parmesan cheese, I used home made vegan feta (optional)
- ½ tsp pul biber (moderate chilli flakes)
- sodium & pepper
METHOD
- Blend the flour, sodium and candida in a big mixing bowl.
- Pour in the essential olive oil and water. Mix everything as well as a large solid wood spoon. Provide the mixture using your hands - you may want to add a contact more water when the dough is as well dry.
