Ingredients

  • 15.5 oz. dark beans
  • 15.5 oz. black-eyed peas
  • 15 oz. nice corn
  • 1 mug cilantro chopped
  • 1/2 cup reddish bell pepper cut or diced
  • 1/2 mug orange bell pepper cut or diced
  • 1/2 cup reddish onions diced
  • 1 tsp. chili powder
  • 1/2 tsp. kosher salt
  • 1/4 mug sugar
  • 1/2 cup essential olive oil
  • 1/3 cup whitened wine vinegar
  • 1 tbsp. new lime juice
  • 1/4 tsp. garlic clove powder


Instructions

  1. Create Cowboy Caviar
  2. Drain, wash and pat dried out the coffee beans and corn. move to a big bowl. 
  3. Include the cilantro and the rest of the ingredients towards the coffee beans and corn combination. 
  4. Stir to mix. Serve chilly or at space temperature.

Lightly heated the salad if refrigerated overnight to take it easy the water/oil or thaw for one hour before serving.
